Raw honey by definition is "honey as it exists in the beehive or as obtained by extraction, settling, or straining without adding heat." (honey.com/images/files/Honey-Definitions.pdf)
When we extract our honey, we settle filter it to allow all of the debris (beeswax & bee parts) from extracting, to rise to the top which allows us to skim off the debris prior to bottling. Over a short period of time the honey will naturally begin to crystallize which gives the honey a "white" or "solid" appearance. The crystallization of honey will occur because honey has a large sugar vs water content. Once the honey crystallizes, we bottle and sell it.
